Ingredients

  • 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, paprika, and salt. Add chicken pieces and coat well. Cover and marinate for at least 1 hour, preferably overnight in the refrigerator.
  2. Preheat oven to 400°F (200°C). Spread marinated chicken on a baking sheet and bake for 20-25 minutes until cooked through.
  3. In a large skillet, heat vegetable oil over medium heat. Add chopped onions and sauté until golden brown.
  4. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Stir in crushed tomatoes and simmer for 10 minutes, allowing the sauce to thicken.
  6. Add baked chicken to the skillet along with any juices from the baking sheet.
  7. Pour in the heavy cream and stir until well combined. Simmer for an additional 5 minutes.
  8. Garnish with fresh cilantro before serving.
