- 4 boneless chicken breasts
- 1 cup mushrooms, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushrooms, cooking until mushrooms are tender.
- In a bowl, mix cooked mushrooms, cream cheese, mozzarella cheese, thyme, salt, and pepper until well combined.
- Flatten chicken breasts using a meat mallet. Place a generous amount of the mushroom mixture on each chicken breast and roll tightly.
- Secure each roll with toothpicks and dip in breadcrumbs to coat.
- Place chicken rolls in a greased baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Remove from oven, let cool for a few minutes, then remove toothpicks and serve.
Notes
- For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs before rolling.
- Feel free to substitute the mushrooms with spinach or other vegetables.
