Ingredients

  • 4 boneless chicken breasts
  • 1 cup mushrooms, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushrooms, cooking until mushrooms are tender.
  3. In a bowl, mix cooked mushrooms, cream cheese, mozzarella cheese, thyme, salt, and pepper until well combined.
  4. Flatten chicken breasts using a meat mallet. Place a generous amount of the mushroom mixture on each chicken breast and roll tightly.
  5. Secure each roll with toothpicks and dip in breadcrumbs to coat.
  6. Place chicken rolls in a greased baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  7. Remove from oven, let cool for a few minutes, then remove toothpicks and serve.
