Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups egg noodles
- 1 tablespoon lemon juice (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and sauté until softened, about 5-7 minutes.
- Stir in garlic and cook for an additional minute until fragrant.
- Add chicken broth, shredded chicken, thyme, parsley, salt, and pepper. Bring to a boil.
- Once boiling, stir in the egg noodles and cook according to package instructions until tender, about 6-8 minutes.
- If using, stir in lemon juice before serving for added brightness.
- Serve hot and enjoy!

- Feel free to add other vegetables such as peas or corn for added nutrition.
