Ingredients

  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 tablespoon lemon juice (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and sauté until softened, about 5-7 minutes.
  2. Stir in garlic and cook for an additional minute until fragrant.
  3. Add chicken broth, shredded chicken, thyme, parsley, salt, and pepper. Bring to a boil.
  4. Once boiling, stir in the egg noodles and cook according to package instructions until tender, about 6-8 minutes.
  5. If using, stir in lemon juice before serving for added brightness.
