Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the curry powder, cumin, and turmeric, stirring well to combine.
  5. Add the chicken pieces to the pot, browning them on all sides.
  6. Pour in the coconut milk and chicken broth, stirring to combine.
  7. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
  8. Season with salt to taste.
  9. Serve hot, garnished with fresh cilantro.
