Description
A classic cherry pie made with fresh or canned cherries, a buttery crust, and a touch of almond extract for flavor.

- 2 cups fresh or canned cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon almond extract
- 1/4 teaspoon salt
- 1 tablespoon butter, cut into small pieces
- 1 package refrigerated pie crusts (or homemade pie crust)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine cherries, sugar, cornstarch, lemon juice, almond extract, and salt. Stir until well combined.
- Roll out one pie crust and fit it into a 9-inch pie pan. Fill with the cherry mixture and dot with butter.
- Roll out the second pie crust and place it over the filling. Seal the edges and cut slits on top to create a vent.
- Brush the top crust with beaten egg.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbling.
- Allow to cool before slicing and serving.
Notes
- For a sweeter pie, adjust the sugar according to the tartness of the cherries.
- Serve with vanilla ice cream or whipped cream for an extra treat.
- You can use frozen cherries; just make sure to thaw and drain excess liquid before using.
