Ingredients

  • 2 cups fresh or canned cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter, cut into small pieces
  • 1 package refrigerated pie crusts (or homemade pie crust)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, almond extract, and salt. Stir until well combined.
  3. Roll out one pie crust and fit it into a 9-inch pie pan. Fill with the cherry mixture and dot with butter.
  4. Roll out the second pie crust and place it over the filling. Seal the edges and cut slits on top to create a vent.
  5. Brush the top crust with beaten egg.
  6. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbling.
  7. Allow to cool before slicing and serving.

Notes

  • For a sweeter pie, adjust the sugar according to the tartness of the cherries.
  • Serve with vanilla ice cream or whipped cream for an extra treat.
  • You can use frozen cherries; just make sure to thaw and drain excess liquid before using.
