- 2 cups fresh or frozen cherries, pitted
- 2 medium apples, peeled, cored, and diced
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon lemon juice
Instructions
- In a medium saucepan, combine the cherries, diced apples, sugar, and water.
- Cook over medium heat, stirring occasionally, until the mixture begins to bubble.
- Add the vanilla extract, ground cinnamon, and lemon juice. Stir well.
- Reduce the heat to low and simmer for about 15-20 minutes, or until the fruits are soft and the mixture has thickened.
- Remove from heat and let cool slightly before serving.
Notes
- You can adjust the sugar based on the sweetness of the fruits used.
- This compote can be stored in an airtight container in the refrigerator for up to one week.
