Delicious and sweet cheese and raisin-filled crepes, perfect for breakfast or dessert.

- 1 cup all-purpose flour
- 1 1/2 cups milk
- 3 eggs
- 1/4 teaspoon salt
- 2 tablespoons, melted butter
- 8 ounces, softened cream cheese
- 1/4 cup powdered sugar
- 1/2 cup raisins
- 1 teaspoon vanilla extract
- to taste additional powdered sugar for serving
Instructions
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter and let the batter rest for 30 minutes.
- In another bowl, mix the softened cream cheese, powdered sugar, raisins, and vanilla extract until well combined.
- Heat a non-stick skillet over medium heat. Pour in about 1/4 cup of the crepe batter, swirling the pan to coat the bottom evenly. Cook for about 2 minutes until the edges start to lift and the bottom is lightly golden.
- Flip the crepe and cook for another minute on the other side. Remove from the skillet and repeat with the remaining batter.
- To serve, spread a layer of the cheese and raisin filling on one half of each crepe and fold over. Dust with powdered sugar before serving.
