Ingredients

  • 1 1/2 cups milk
  • 3 eggs
  • 1/4 teaspoon salt
  • 2 tablespoons, melted butter
  • 8 ounces, softened cream cheese
  • 1/4 cup powdered sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • to taste additional powdered sugar for serving

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Stir in the melted butter and let the batter rest for 30 minutes.
  2. In another bowl, mix the softened cream cheese, powdered sugar, raisins, and vanilla extract until well combined.
  3. Heat a non-stick skillet over medium heat. Pour in about 1/4 cup of the crepe batter, swirling the pan to coat the bottom evenly. Cook for about 2 minutes until the edges start to lift and the bottom is lightly golden.
  4. Flip the crepe and cook for another minute on the other side. Remove from the skillet and repeat with the remaining batter.
  5. To serve, spread a layer of the cheese and raisin filling on one half of each crepe and fold over. Dust with powdered sugar before serving.
