Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Stir in the pink food coloring until the dough is evenly colored.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
- For the icing, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed.
- Once the cookies are cool, drizzle or spread the pink icing on top and decorate with sprinkles if desired.
- Let the icing set before serving.
