Description

These delightful pink graduation cookies are the perfect treat to celebrate your special day! Soft, chewy, and adorned with pink icing, they are a sweet way to commemorate your achievements.

Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup pink food coloring
  • 2 cups powdered sugar (for icing)
  • 3 tablespoons milk (for icing)
  • 1 teaspoon vanilla extract (for icing)
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Stir in the pink food coloring until the dough is evenly colored.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
  9. For the icing, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed.
  10. Once the cookies are cool, drizzle or spread the pink icing on top and decorate with sprinkles if desired.
  11. Let the icing set before serving.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • For a deeper pink color, add more food coloring gradually until desired shade is achieved.
  • Feel free to customize the cookie shapes using graduation-themed cookie cutters.
