A delicious and nutritious side dish featuring buckwheat tossed in buttery dill goodness.

- 1 cup buckwheat groats
- 2 cups vegetable broth or water
- 3 tablespoons unsalted butter
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- Rinse the buckwheat groats under cold water and drain.
- In a medium saucepan, bring the vegetable broth or water to a boil.
- Add the rinsed buckwheat groats to the boiling liquid.
- Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the buckwheat with a fork and stir in the butter, fresh dill, salt, and pepper.
- Serve warm as a side dish.
Notes
- For added flavor, you can sauté the buckwheat in a little butter before adding the liquid.
- This dish pairs well with grilled meats or roasted vegetables.
