- 1 cup buckwheat groats
- 2 cups vegetable broth or water
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the buckwheat groats under cold water. Drain well.
- In a medium saucepan, bring the vegetable broth or water to a boil. Add the buckwheat and a pinch of salt.
- Reduce heat to low, cover, and simmer for about 15 minutes or until buckwheat is tender and liquid is absorbed.
- In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and sliced mushrooms. Cook until mushrooms are browned and tender.
- Stir in thyme, salt, and pepper. Cook for an additional 2-3 minutes.
- Combine the cooked buckwheat with the mushroom mixture. Stir well to combine.
- Serve hot, garnished with fresh parsley.
