Ingredients

  • 1 cup buckwheat groats
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the buckwheat groats under cold water. Drain well.
  2. In a medium saucepan, bring the vegetable broth or water to a boil. Add the buckwheat and a pinch of salt.
  3. Reduce heat to low, cover, and simmer for about 15 minutes or until buckwheat is tender and liquid is absorbed.
  4. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  5. Add minced garlic and sliced mushrooms. Cook until mushrooms are browned and tender.
  6. Stir in thyme, salt, and pepper. Cook for an additional 2-3 minutes.
  7. Combine the cooked buckwheat with the mushroom mixture. Stir well to combine.
  8. Serve hot, garnished with fresh parsley.
