- 2 tablespoons vegetable oil
- 1 pound chicken, cut into pieces
- 1 pound pork shoulder, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup green beans, cut into pieces
- 1 cup lima beans
- 1 cup barbecue sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce (optional)
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken and pork, browning on all sides.
- Remove the meat and set aside. In the same pot, add the onion and garlic, cooking until softened.
- Return the meat to the pot and add the diced tomatoes, chicken broth, corn, green beans, lima beans, barbecue sauce, Worcestershire sauce, and hot sauce if using.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the meat is tender and the flavors meld.
- Season with salt and pepper to taste before serving.
