Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken, cut into pieces
  • 1 pound pork shoulder, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup green beans, cut into pieces
  • 1 cup lima beans
  • 1 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken and pork, browning on all sides.
  2. Remove the meat and set aside. In the same pot, add the onion and garlic, cooking until softened.
  3. Return the meat to the pot and add the diced tomatoes, chicken broth, corn, green beans, lima beans, barbecue sauce, Worcestershire sauce, and hot sauce if using.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the meat is tender and the flavors meld.
  5. Season with salt and pepper to taste before serving.
