- 4 cups broccoli florets
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the heavy cream, shredded cheddar cheese, salt, black pepper, and cayenne pepper (if using). Cook over low heat, stirring until the cheese is melted and the soup is heated through.
- Serve hot, garnished with additional cheddar cheese or croutons if desired.
