Ingredients

  • 1 large Onion
  • 3 tablespoons Butter
  • 1 cup Vegetable broth

  • to taste Black pepper
  • for garnish Fresh parsley

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the sliced onions and sauté until they are soft and translucent, about 5 minutes.
  3. Add the potato chunks to the skillet and stir to combine with the onions.
  4. Pour in the vegetable broth, and season with salt and black pepper.
  5. Cover the skillet and let the potatoes simmer on low heat for about 20-25 minutes, or until they are tender.
  6. Once cooked, remove the lid and cook for an additional 5 minutes to allow excess liquid to evaporate.
  7. Garnish with fresh parsley before serving.
