- 2 lbs Potatoes
- 1 large Onion
- 3 tablespoons Butter
- 1 cup Vegetable broth
- to taste Salt
- to taste Black pepper
- for garnish Fresh parsley
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the sliced onions and sauté until they are soft and translucent, about 5 minutes.
- Add the potato chunks to the skillet and stir to combine with the onions.
- Pour in the vegetable broth, and season with salt and black pepper.
- Cover the skillet and let the potatoes simmer on low heat for about 20-25 minutes, or until they are tender.
- Once cooked, remove the lid and cook for an additional 5 minutes to allow excess liquid to evaporate.
- Garnish with fresh parsley before serving.
