- 1 onion, diced

- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and garlic, sauté until softened.
- Stir in the bell pepper, carrots, and zucchini. Cook for about 5 minutes.
- Add the cherry tomatoes, vegetable broth, thyme, salt, and pepper. Bring to a simmer.
- Nestle the cod fillets into the vegetable mixture.
- Cover and cook for 10-15 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.
