Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, chopped
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season the chicken thighs with salt and pepper. Add them to the pot, skin side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken and set aside.
  3. In the same pot, add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
  4. Add the garlic and bell pepper, and cook for another 2 minutes until fragrant.
  5. Pour in the chicken broth and diced tomatoes, scraping the bottom of the pot to release any browned bits.
  6. Stir in thyme and rosemary, then return the chicken to the pot, skin side up.
  7. Bring to a simmer, then cover and reduce heat to low. Cook for about 30-40 minutes, or until the chicken is cooked through and tender.
  8. Check seasoning and adjust with salt and pepper as needed.
  9. Serve hot, garnished with fresh parsley.

Notes

  • You can add other vegetables like potatoes or green beans for more variety.
  • This dish pairs well with rice or crusty bread to soak up the sauce.
