- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 bell pepper, chopped
- 1 cup chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season the chicken thighs with salt and pepper. Add them to the pot, skin side down, and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken and set aside.
- In the same pot, add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add the garlic and bell pepper, and cook for another 2 minutes until fragrant.
- Pour in the chicken broth and diced tomatoes, scraping the bottom of the pot to release any browned bits.
- Stir in thyme and rosemary, then return the chicken to the pot, skin side up.
- Bring to a simmer, then cover and reduce heat to low. Cook for about 30-40 minutes, or until the chicken is cooked through and tender.
- Check seasoning and adjust with salt and pepper as needed.
- Serve hot, garnished with fresh parsley.
Notes
- You can add other vegetables like potatoes or green beans for more variety.
- This dish pairs well with rice or crusty bread to soak up the sauce.
