  • 2 pounds beef chuck roast, cut into large chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 red bell peppers, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chunks with salt and pepper, then add them to the pot. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the sliced red bell peppers and cook for an additional 2-3 minutes until they begin to soften.
  5. Stir in the diced tomatoes, beef broth, Worcestershire sauce, dried oregano, and paprika. Bring the mixture to a simmer.
  6. Return the browned beef to the pot, ensuring it’s submerged in the liquid. Cover the pot with a lid.
  7. Transfer the pot to the preheated oven and braise for 2 to 2.5 hours, or until the beef is fork-tender.
  8. Remove the pot from the oven and let it rest for a few minutes. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot, garnished with fresh parsley.
