  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • Salt and pepper to taste
  • 4 oz Boursin cheese
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken cubes, seasoning with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
  3. Reduce the heat to low and add the Boursin cheese, stirring until melted and combined with the chicken.
  4. Pour in the chicken broth and heavy cream, stirring to create a creamy sauce. Bring to a gentle simmer.
  5. Add the cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
  6. Add the cooked pasta to the skillet, tossing to combine everything evenly. Stir in the Parmesan cheese.
