- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, cut into cubes
- Salt and pepper to taste
- 4 oz Boursin cheese
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chicken cubes, seasoning with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
- Reduce the heat to low and add the Boursin cheese, stirring until melted and combined with the chicken.
- Pour in the chicken broth and heavy cream, stirring to create a creamy sauce. Bring to a gentle simmer.
- Add the cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes soften, about 2-3 minutes.
- Add the cooked pasta to the skillet, tossing to combine everything evenly. Stir in the Parmesan cheese.
- Serve hot, garnished with fresh basil.
