Delicious homemade pierogi filled with sweet blueberries, perfect for dessert or a special treat.
Ingredients

- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup butter, softened
- 1/4 teaspoon salt
- 1 cup fresh or frozen blueberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Butter and sugar for serving
Instructions
- In a mixing bowl, combine flour and salt. Make a well in the center and add the egg, sour cream, and softened butter. Mix until a dough forms.
- Knead the dough on a floured surface until smooth, about 5 minutes. Wrap in plastic wrap and let it rest for 30 minutes.
- In another bowl, mix blueberries, sugar, lemon juice, and vanilla extract. Set aside.
- Roll out the dough to about 1/8 inch thick. Cut into circles using a round cutter.
- Place a spoonful of blueberry filling in the center of each circle. Fold the dough over and pinch the edges to seal.
- Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float to the surface, about 3-4 minutes.
- Remove with a slotted spoon and drain well.
- In a skillet, melt butter and sauté the pierogi for a few minutes until golden brown.
- Serve warm, sprinkled with sugar and additional blueberries if desired.
Notes
- If using frozen blueberries, there’s no need to thaw them before mixing with sugar.
- For a richer flavor, add a pinch of cinnamon to the blueberry filling.
- These pierogi can be made ahead and frozen before cooking. Just boil them straight from the freezer, adding a minute or two to the cooking time.
