Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup sour cream
  • 1/4 cup butter, softened
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Butter and sugar for serving

Instructions

  1. In a mixing bowl, combine flour and salt. Make a well in the center and add the egg, sour cream, and softened butter. Mix until a dough forms.
  2. Knead the dough on a floured surface until smooth, about 5 minutes. Wrap in plastic wrap and let it rest for 30 minutes.
  3. In another bowl, mix blueberries, sugar, lemon juice, and vanilla extract. Set aside.
  4. Roll out the dough to about 1/8 inch thick. Cut into circles using a round cutter.
  5. Place a spoonful of blueberry filling in the center of each circle. Fold the dough over and pinch the edges to seal.
  6. Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float to the surface, about 3-4 minutes.
  7. Remove with a slotted spoon and drain well.
  8. In a skillet, melt butter and sauté the pierogi for a few minutes until golden brown.
  9. Serve warm, sprinkled with sugar and additional blueberries if desired.

Notes

  • If using frozen blueberries, there’s no need to thaw them before mixing with sugar.
  • For a richer flavor, add a pinch of cinnamon to the blueberry filling.
  • These pierogi can be made ahead and frozen before cooking. Just boil them straight from the freezer, adding a minute or two to the cooking time.
