Description

Deliciously creamy blueberry cheesecake bars with a buttery graham cracker crust, perfect for any dessert occasion.


Ingredients

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter, melted
  • 16 oz Cream cheese, softened
  • 3/4 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 2 cups Blueberries, fresh or frozen
  • optional Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined.
  3. Press the graham cracker mixture into the bottom of the prepared baking pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with 3/4 cup granulated sugar until smooth and creamy. Add in vanilla extract and mix until combined.
  5. Add eggs, one at a time, mixing well after each addition until fully incorporated.
  6. Gently fold in the blueberries into the cream cheese mixture.
  7. Pour the cheesecake mixture over the cooled crust, spreading it evenly.
  8. Bake for 30-35 minutes, or until the center is set and only slightly jiggles.
  9. Remove from the oven and let cool at room temperature for about 1 hour. Then transfer to the refrigerator to chill for at least 2 hours.
  10. Once chilled, lift the cheesecake out of the pan using the parchment overhang. Cut into bars and dust with powdered sugar if desired before serving.

Notes

  • For best results, use fresh blueberries. If using frozen, do not thaw them before adding to the batter.
  • Chill the cheesecake bars completely before serving for the best texture.
  • These bars can be stored in an airtight container in the refrigerator for up to 5 days.
