Deliciously creamy blueberry cheesecake bars with a buttery graham cracker crust, perfect for any dessert occasion.

- 1 1/2 cups Graham cracker crumbs
- 1/4 cup Granulated sugar
- 1/2 cup Unsalted butter, melted
- 16 oz Cream cheese, softened
- 3/4 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 2 large Eggs
- 2 cups Blueberries, fresh or frozen
- optional Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined.
- Press the graham cracker mixture into the bottom of the prepared baking pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with 3/4 cup granulated sugar until smooth and creamy. Add in vanilla extract and mix until combined.
- Add eggs, one at a time, mixing well after each addition until fully incorporated.
- Gently fold in the blueberries into the cream cheese mixture.
- Pour the cheesecake mixture over the cooled crust, spreading it evenly.
- Bake for 30-35 minutes, or until the center is set and only slightly jiggles.
- Remove from the oven and let cool at room temperature for about 1 hour. Then transfer to the refrigerator to chill for at least 2 hours.
- Once chilled, lift the cheesecake out of the pan using the parchment overhang. Cut into bars and dust with powdered sugar if desired before serving.
Notes
- For best results, use fresh blueberries. If using frozen, do not thaw them before adding to the batter.
- Chill the cheesecake bars completely before serving for the best texture.
- These bars can be stored in an airtight container in the refrigerator for up to 5 days.
