- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese (for alfredo)
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Set up a breading station: Place flour in one dish, beaten eggs in another, and combine breadcrumbs and grated Parmesan in a third dish.
- Dredge each chicken breast in flour, dip in eggs, then coat with the breadcrumb mixture.
- In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken and cook for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish, top each piece with marinara sauce and mozzarella cheese, then bake for 20 minutes or until the chicken is cooked through.
- Meanwhile, cook the fettuccine pasta according to package instructions. Drain and set aside.
- In the same pot, melt butter over medium heat. Add heavy cream and garlic powder; bring to a simmer.
- Stir in the grated Parmesan cheese and season with salt and pepper. Mix until smooth and creamy.
- Add the cooked fettuccine to the sauce, tossing to coat evenly.
- Serve the chicken parmesan over a bed of creamy fettuccine alfredo, garnished with fresh parsley.
