  • 2 medium beets, peeled and diced
  • 2 medium potatoes, peeled and diced
  • 1 cup all-purpose flour, plus more for dusting
  • 1 egg, beaten
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, boil the diced beets until tender, about 15 minutes. Drain and let cool slightly.
  2. In the same pot, boil the diced potatoes until tender, about 10-15 minutes. Drain and mash together with the beets until smooth.
  3. In a mixing bowl, combine the beet and potato mixture with the flour, beaten egg, and salt. Mix until a dough forms. If the dough is too sticky, add more flour as needed.
  4. Dust a clean surface with flour and roll out the dough to about 1/4 inch thickness. Cut into circles using a round cookie cutter.
  5. Place a small spoonful of your desired filling (cheese, meat, or vegetables) in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  6. Bring a large pot of salted water to a boil. Drop the dumplings in batches into the boiling water. Cook until they float to the surface, about 3-4 minutes.
  7. Remove with a slotted spoon and let drain. Heat olive oil in a skillet and sauté the dumplings for a few minutes until slightly crispy.
  8. Serve warm, garnished with fresh herbs if desired.

  • You can use leftover mashed potatoes for this recipe to save time.
