- 1 lb beef flank steak, thinly sliced
- 1 cup fresh herbs (such as basil, cilantro, and mint)
- 1 cucumber, thinly sliced
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Oil for cooking
Instructions
- In a small bowl, combine rice vinegar, sugar, and salt. Add cucumber slices and toss to coat. Let sit for at least 30 minutes to pickle.
- Season the beef slices with salt, pepper, soy sauce, and garlic.
- Place a few fresh herbs on each slice of beef and roll them up tightly.
- Heat oil in a skillet over medium-high heat. Add the beef rolls and sear on all sides until cooked through, about 5-7 minutes.
- Remove from heat and let rest for a few minutes before slicing.
- Serve the beef rolls with the pickled cucumber on the side.
