Ingredients

  • 2 cups all-purpose flour
  • 1 eggs
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • for serving sour cream
  • for garnish chives, chopped

Instructions

  1. In a large bowl, mix flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
  3. In a skillet, melt butter over medium heat. Add chopped onion and cook until translucent, then add minced garlic and ground beef. Cook until beef is browned and fully cooked. Season with salt and pepper. Let cool.
  4. Roll out the dough to about 1/8 inch thick. Cut into circles using a cookie cutter or glass.
  5. Place a spoonful of beef filling in the center of each circle. Fold over and seal the edges by pressing them together.
  6. Bring a large pot of salted water to a boil. Cook pierogi in batches for about 5-7 minutes, or until they float to the top. Remove and drain.
  7. Serve hot with sour cream and garnish with chopped chives.
