- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 can (14.5 ounces) diced tomatoes, with juice
- 2 cups beef broth
- 2 tablespoons paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 cup frozen peas
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove beef and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
- Add the bell peppers, carrots, and celery to the pot. Cook for about 5 minutes, stirring occasionally.
- Return the browned beef to the pot. Stir in the diced tomatoes, beef broth, paprika, thyme, salt, pepper, and bay leaf.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- In the last 10 minutes of cooking, add the frozen peas and stir.
- Remove the bay leaf before serving. Garnish with chopped parsley.
