  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 2 cups beef broth
  • 2 tablespoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 cup frozen peas
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove beef and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Add the bell peppers, carrots, and celery to the pot. Cook for about 5 minutes, stirring occasionally.
  4. Return the browned beef to the pot. Stir in the diced tomatoes, beef broth, paprika, thyme, salt, pepper, and bay leaf.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  6. In the last 10 minutes of cooking, add the frozen peas and stir.
  7. Remove the bay leaf before serving. Garnish with chopped parsley.
