- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup beef broth
- 1 tablespoon olive oil
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
- Add ground beef to the pot, cook until browned. Drain excess fat.
- Stir in chili powder, cumin, paprika, salt, and pepper. Cook for about 1 minute to toast the spices.
- Add crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for at least 30 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary. Serve hot with optional toppings.
