  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add ground beef to the pot, cook until browned. Drain excess fat.
  3. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for about 1 minute to toast the spices.
  4. Add crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning as necessary. Serve hot with optional toppings.
