- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups green beans, trimmed and cut
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 bay leaves
- Fresh parsley, for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add chopped onion and garlic. Sauté until the onion is translucent.
- Stir in carrots, potatoes, and green beans. Cook for another 5 minutes.
- Return the beef to the pot and add the beef broth, red wine, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and let simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove bay leaves before serving. Garnish with fresh parsley.
