Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups green beans, trimmed and cut
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 bay leaves
  • Fresh parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat.
  2. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  3. In the same pot, add chopped onion and garlic. Sauté until the onion is translucent.
  4. Stir in carrots, potatoes, and green beans. Cook for another 5 minutes.
  5. Return the beef to the pot and add the beef broth, red wine, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and let simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Remove bay leaves before serving. Garnish with fresh parsley.
