- 1 lb (450g) beef sirloin, cut into 1-inch cubes
- 1 bell pepper, cut into 1-inch pieces
- 1 onion, cut into wedges
- 1 zucchini, sliced into rounds
- 1 cup cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a large bowl, whisk together olive oil, soy sauce, balsamic vinegar, garlic, oregano, salt, and pepper.
- Add beef cubes to the marinade, ensuring they are well coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread beef, bell pepper, onion, zucchini, and cherry tomatoes onto skewers, alternating between beef and vegetables.
- Grill skewers for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Feel free to substitute your favorite vegetables or add mushrooms for extra flavor.
- For an extra kick, add a pinch of red pepper flakes to the marinade.
