Ingredients

  • 1 lb (450g) beef sirloin, cut into 1-inch cubes
  • 1 bell pepper, cut into 1-inch pieces
  • 1 onion, cut into wedges
  • 1 zucchini, sliced into rounds
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a large bowl, whisk together olive oil, soy sauce, balsamic vinegar, garlic, oregano, salt, and pepper.
  2. Add beef cubes to the marinade, ensuring they are well coated. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread beef, bell pepper, onion, zucchini, and cherry tomatoes onto skewers, alternating between beef and vegetables.
  6. Grill skewers for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are tender.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

  • Feel free to substitute your favorite vegetables or add mushrooms for extra flavor.
