- 4 medium Potato Salad
- 1 cup Mayonnaise
- 2 tablespoons Dijon Mustard
- 2 stalks Celery
- 1/2 cup Red Onion

Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and let cool.
- In a large bowl, mix together mayonnaise, Dijon mustard, celery, red onion, salt, and pepper.
- Add the cooled potatoes to the bowl and gently fold until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
