- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 4 cups mixed greens (romaine, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or canned)
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup cilantro, chopped
- 1/4 cup ranch dressing (or your favorite dressing)
- Salt and pepper to taste
Instructions
- In a bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is fully coated.
- In a large salad bowl, layer the mixed greens as the base.
- Top the greens with cherry tomatoes, corn, red onion, and cheddar cheese.
- Add the BBQ chicken on top of the salad.
- Drizzle with ranch dressing and sprinkle with cilantro.
- Season with salt and pepper to taste.
- Toss gently before serving to combine all the ingredients.
