  • 1 pound boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for spice preference)
  • 2 cups cooked white rice
  • 1 cup steamed broccoli (optional)
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  3. Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third bowl.
  4. Dredge each chicken piece in flour, dip into the egg, then coat thoroughly with panko breadcrumbs.
  5. Place the breaded chicken on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through, flipping halfway.
  7. While the chicken is baking, prepare the creamy spicy sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a bowl. Adjust the sriracha for desired heat.
  8. Once the chicken is cooked, toss it in the creamy spicy sauce until well coated.
  9. To serve, place a scoop of steamed rice in a bowl, top with the Bang Bang chicken, and add steamed broccoli if desired.
  10. Garnish with chopped green onions and sesame seeds.
