- 1 pound boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for spice preference)
- 2 cups cooked white rice
- 1 cup steamed broccoli (optional)
- Green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Set up a breading station: Place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third bowl.
- Dredge each chicken piece in flour, dip into the egg, then coat thoroughly with panko breadcrumbs.
- Place the breaded chicken on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through, flipping halfway.
- While the chicken is baking, prepare the creamy spicy sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a bowl. Adjust the sriracha for desired heat.
- Once the chicken is cooked, toss it in the creamy spicy sauce until well coated.
- To serve, place a scoop of steamed rice in a bowl, top with the Bang Bang chicken, and add steamed broccoli if desired.
- Garnish with chopped green onions and sesame seeds.
