Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup mashed baked potatoes
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped chives (optional)

Instructions

  1. In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour, sugar, salt, and garlic powder if using.
  3. Add the mashed potatoes, melted butter, egg, vanilla extract, and the frothy yeast mixture to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  7. Once the dough has risen, punch it down and roll it out into a rectangle on a floured surface.
  8. If using, sprinkle shredded cheese and chopped chives over the dough, then roll it tightly from the long side.
  9. Place the rolled dough into the prepared loaf pan, seam side down. Cover and let it rise for another 30 minutes.
  10. Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  11. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
