- 8 ounces pasta (penne or rigatoni recommended)
- 1 block (8 ounces) feta cheese
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, add the cherry tomatoes, block of feta cheese, minced garlic, olive oil, red pepper flakes, salt, and pepper. Mix to combine.
- Bake for about 25-30 minutes, until the tomatoes are bursting and the feta is golden.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
- Remove the baking dish from the oven and mix everything together, mashing the feta with a fork to create a creamy sauce.
- Add the cooked pasta to the baking dish and mix well, ensuring the pasta is coated with the sauce.
- Serve hot, garnished with fresh basil.
