- 2 Ripe avocados (Mashed or sliced, to preference)
- 4 Eggs (Fresh, for poaching)
- 4 slices Whole grain or sourdough bread (Toasted)
- to taste Salt (For seasoning)
- to taste Pepper (For seasoning)
- optional Red pepper flakes (For topping)
- 1 tablespoon Lemon juice (For flavor)
- optional Fresh herbs (Such as cilantro or parsley for garnish)
Instructions
- Toast the slices of bread to your desired level of crispiness.
- While the bread is toasting, bring a pot of water to a gentle simmer and add a splash of vinegar.
- Crack each egg into a small bowl or ramekin. Create a vortex in the simmering water and gently slide each egg into the center of the vortex.
- Poach the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon and place on a paper towel to drain.
- In a bowl, mash the avocados with lemon juice, salt, and pepper to taste. Alternatively, slice the avocados if you prefer.
- Spread the mashed avocado evenly on the toasted bread slices.
- Top each slice with a poached egg.
- Season with additional salt, pepper, and red pepper flakes if desired. Garnish with fresh herbs.
- Serve immediately and enjoy your avocado toast with poached eggs!
