Ingredients

  • 2 Ripe avocados (Mashed or sliced, to preference)
  • 4 Eggs (Fresh, for poaching)
  • 4 slices Whole grain or sourdough bread (Toasted)

  • to taste Pepper (For seasoning)
  • optional Red pepper flakes (For topping)
  • 1 tablespoon Lemon juice (For flavor)
  • optional Fresh herbs (Such as cilantro or parsley for garnish)

Instructions

  1. Toast the slices of bread to your desired level of crispiness.
  2. While the bread is toasting, bring a pot of water to a gentle simmer and add a splash of vinegar.
  3. Crack each egg into a small bowl or ramekin. Create a vortex in the simmering water and gently slide each egg into the center of the vortex.
  4. Poach the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny. Remove the eggs with a slotted spoon and place on a paper towel to drain.
  5. In a bowl, mash the avocados with lemon juice, salt, and pepper to taste. Alternatively, slice the avocados if you prefer.
  6. Spread the mashed avocado evenly on the toasted bread slices.
  7. Top each slice with a poached egg.
  8. Season with additional salt, pepper, and red pepper flakes if desired. Garnish with fresh herbs.
