Description

This air fryer squash recipe is a quick and easy way to enjoy delicious, perfectly cooked squash with minimal effort. The air fryer gives the squash a tender texture while adding a beautiful golden-brown finish.

Ingredients

Scale
  • 2 medium zucchini, sliced into rounds
  • 2 medium yellow squash, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and yellow squash.
  3. Drizzle the olive oil over the squash and sprinkle with garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  4. Place the seasoned squash in the air fryer basket in a single layer, working in batches if necessary.
  5. Air fry for 10-12 minutes, shaking the basket halfway through, until the squash is tender and golden brown.
  6. If using, sprinkle the grated Parmesan cheese over the squash during the last 2 minutes of cooking.
  7. Remove from the air fryer, garnish with fresh herbs if desired, and serve immediately.

Notes

  • Feel free to adjust the seasoning according to your taste.
  • You can use other types of squash such as butternut or acorn for a different flavor.
