Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 2 medium yellow squashes, sliced into rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini and squash.
  3. Drizzle the olive oil over the vegetables and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss gently to coat evenly.
  4. Place the seasoned vegetables in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
  5. Air fry for 10-12 minutes, shaking the basket halfway through cooking to ensure even crisping.
  6. Once done, remove from the air fryer and serve warm. Sprinkle with grated Parmesan cheese if desired.
