- 2 medium zucchinis, sliced into rounds
- 2 medium yellow squashes, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchini and squash.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss gently to coat evenly.
- Place the seasoned vegetables in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 10-12 minutes, shaking the basket halfway through cooking to ensure even crisping.
- Once done, remove from the air fryer and serve warm. Sprinkle with grated Parmesan cheese if desired.
