Ingredients

  • 2 large russet potatoes, grated
  • 1 small onion, grated
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Cooking spray or olive oil for greasing

Instructions

  1. In a large bowl, combine the grated potatoes and onion. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. Add the flour, beaten egg, salt, black pepper, and garlic powder to the bowl. Mix until well combined.
  3. Preheat your air fryer to 375°F (190°C).
  4. Shape the potato mixture into small pancakes, about 2-3 inches in diameter.
  5. Lightly spray the air fryer basket with cooking spray or brush with olive oil.
  6. Place the potato pancakes in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches.
  7. Air fry the pancakes for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
  8. Remove the pancakes from the air fryer and serve hot with sour cream or applesauce.
