- 2 large russet potatoes, grated
- 1 small onion, grated
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Cooking spray or olive oil for greasing
Instructions
- In a large bowl, combine the grated potatoes and onion. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- Add the flour, beaten egg, salt, black pepper, and garlic powder to the bowl. Mix until well combined.
- Preheat your air fryer to 375°F (190°C).
- Shape the potato mixture into small pancakes, about 2-3 inches in diameter.
- Lightly spray the air fryer basket with cooking spray or brush with olive oil.
- Place the potato pancakes in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches.
- Air fry the pancakes for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove the pancakes from the air fryer and serve hot with sour cream or applesauce.
