Description

This air fryer meal prep recipe makes it easy to prepare healthy meals for the week in just a fraction of the time. With the air fryer, you can get crispy and delicious results without the excess oil.


Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large bowl, combine diced chicken, olive oil, garlic powder, paprika, salt, and black pepper. Mix well to ensure the chicken is evenly coated.
  2. Preheat the air fryer to 400°F (200°C).
  3. Place the seasoned chicken in the air fryer basket in a single layer. Cook for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  4. While the chicken is cooking, toss the mixed vegetables with Italian seasoning.
  5. After the chicken is done, remove it from the air fryer and set aside. Add the mixed vegetables to the air fryer basket and cook at 400°F (200°C) for 8-10 minutes, shaking the basket halfway through, until the vegetables are tender and slightly crispy.
  6. Once the vegetables are done, combine them with the chicken in a meal prep container. Allow to cool before sealing and storing in the refrigerator.
