Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup nuts (e.g., almonds, walnuts, pecans)
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup dried fruit (e.g., raisins, cranberries)

Instructions

  1. In a large bowl, combine rolled oats, nuts, honey (or maple syrup), melted coconut oil, vanilla extract, salt, and cinnamon (if using). Mix well until all the oats are coated.
  2. Preheat your air fryer to 300°F (150°C).
  3. Spread the granola mixture evenly in the air fryer basket. If your air fryer is small, you may need to do this in batches.
  4. Air fry for 8-10 minutes, shaking the basket halfway through for even cooking. Keep an eye on it to prevent burning.
  5. Once golden brown and crispy, remove the granola from the air fryer and let it cool completely. It will continue to harden as it cools.
  6. Stir in dried fruit if using, and store in an airtight container for up to two weeks.
