These air fryer chicken fajitas are a quick and delicious dinner option, packed with flavor and ready in just 25 minutes.


Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Tortillas, for serving
  • Optional toppings: sour cream, guacamole, salsa, cheese

Instructions

  1. In a large bowl, combine the chicken strips, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper. Toss until everything is well coated.
  2. Preheat the air fryer to 400°F (200°C).
  3. Place the chicken and vegetable mixture in the air fryer basket in a single layer. You may need to cook in batches depending on the size of your air fryer.
  4. Cook for 12-15 minutes, shaking the basket halfway through, until the chicken is cooked through and the vegetables are tender.
  5. Remove from the air fryer and serve immediately in tortillas with your choice of toppings.

Notes

  • Feel free to customize the vegetables based on your preference. Zucchini, mushrooms, or corn work great too.
  • For a spicier kick, add some sliced jalapeños to the mixture.
