- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon sea salt

Instructions
- Wash and peel the potatoes. Slice them thinly using a mandoline or a sharp knife, aiming for about 1/8 inch thickness.
- Soak the potato slices in cold water for at least 30 minutes to remove excess starch. This will help them become crispier.
- Drain the potatoes and pat them dry with a clean kitchen towel.
- In a large bowl, toss the potato slices with olive oil, sea salt, garlic powder, and paprika until evenly coated.
- Preheat the air fryer to 360°F (182°C).
- Arrange the potato slices in a single layer in the air fryer basket. Avoid overcrowding for even cooking.
- Cook for 10-12 minutes, shaking the basket halfway through to ensure even crisping. Keep an eye on them as cooking times may vary based on thickness.
- Once the chips are golden and crispy, remove them from the air fryer and let them cool on a wire rack.
- Garnish with fresh herbs if desired and serve immediately.

- For extra flavor, try adding different seasonings such as onion powder, cayenne pepper, or your favorite spice blend.
