- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in the sun-dried tomatoes, spinach, Parmesan cheese, and Italian seasoning. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Return the chicken to the skillet and coat it in the creamy sauce. Cook for an additional 2-3 minutes until everything is heated through.
- Serve hot, garnished with fresh basil.
