  • 1 cup sun-dried tomatoes, chopped

  • 1/2 cup grated Parmesan cheese

  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Stir in the sun-dried tomatoes, spinach, Parmesan cheese, and Italian seasoning. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  5. Return the chicken to the skillet and coat it in the creamy sauce. Cook for an additional 2-3 minutes until everything is heated through.
  6. Serve hot, garnished with fresh basil.
