Ingredients

- 2 cups of pasta
- 1 cup of cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup of spinach
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt, to taste
- Pepper, to taste
- Parmesan cheese, for serving (optional)
Instructions
- Boil water in a pot and cook the pasta according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add cherry tomatoes, zucchini, and bell pepper. Cook for 5-7 minutes.
- Add spinach and cook until wilted.
- Drain the pasta and mix it with the veggies.
- Season with salt and pepper.
- Serve with Parmesan cheese if desired.
Notes
- Use any pasta of your choice.
- Feel free to add other vegetables.
- This dish can be served warm or cold.
