Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, diced
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes.
  3. Cut sweet potatoes into cubes.
  4. In a bowl, toss sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  5. Spread sweet potatoes on a baking sheet.
  6. Bake for 25-30 minutes until tender.
  7. In meal prep containers, layer quinoa, black beans, corn, and roasted sweet potatoes.
  8. Top with diced avocado and cilantro.
  9. Store in the fridge for up to 5 days.
