Ingredients

- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes.
- Cut sweet potatoes into cubes.
- In a bowl, toss sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
- Spread sweet potatoes on a baking sheet.
- Bake for 25-30 minutes until tender.
- In meal prep containers, layer quinoa, black beans, corn, and roasted sweet potatoes.
- Top with diced avocado and cilantro.
- Store in the fridge for up to 5 days.
Notes
- Adjust seasonings to your taste.
- Use other veggies if desired.
- Can be served warm or cold.
