Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 avocado, diced
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a bowl, mix black beans, corn, bell pepper, and cumin.
- Once quinoa is cooked, fluff with a fork and combine with the bean mixture.
- Season with salt and pepper.
- Top with diced avocado before serving.
