Description
A convenient way to prepare meals in advance using mason jars.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 can chickpeas, drained and rinsed
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let cool.
- In a bowl, mix cherry tomatoes, cucumber, bell pepper, chickpeas, and feta cheese.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Add the dressing to the vegetable mixture and stir well.
- Layer quinoa and vegetable mixture in mason jars.
- Seal jars and store in the refrigerator for up to 5 days.
Notes
- Use different vegetables based on your preference.
- Vegan option: Omit feta cheese.
- Can add grilled chicken for extra protein.
