Description

A convenient way to prepare meals in advance using mason jars.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let cool.
  5. In a bowl, mix cherry tomatoes, cucumber, bell pepper, chickpeas, and feta cheese.
  6. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  7. Add the dressing to the vegetable mixture and stir well.
  8. Layer quinoa and vegetable mixture in mason jars.
  9. Seal jars and store in the refrigerator for up to 5 days.

Notes

  • Use different vegetables based on your preference.
  • Vegan option: Omit feta cheese.
  • Can add grilled chicken for extra protein.
