- 1 onion, chopped

- 4 cups of chicken broth
Instructions
- Rinse the rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic. Sauté until translucent.
- Cut chicken breast into cubes and add to the pot. Cook until browned.
- Add vegetables, salt, and pepper. Stir well.
- Add rice and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Fluff the rice with a fork and serve hot.
