A delicious and easy corned beef recipe.
Ingredients

- 2 pounds corned beef brisket
- 4 cups water
- 1 onion, quartered
- 2 carrots, chopped
- 2 potatoes, quartered
- 1 teaspoon black peppercorns
- 2 bay leaves
Instructions
- Rinse the corned beef under cold water.
- Place the corned beef in a large pot.
- Add water, onion, carrots, potatoes, peppercorns, and bay leaves.
- Bring to a boil and then reduce heat to a simmer.
- Cover and cook for about 3 hours or until tender.
- Remove from heat and let rest for 10 minutes before slicing.
Notes
- Serve with mustard for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
