Ingredients

- 3 lbs corned beef brisket
- 1 medium head of cabbage, cut into wedges
- 4 large carrots, cut into chunks
- 4 medium potatoes, quartered
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 tablespoon black peppercorns
- 1 tablespoon mustard seeds
- 1 bay leaf
- Water, enough to cover the meat
Instructions
- Place corned beef in a large pot and cover with water.
- Add peppercorns, mustard seeds, bay leaf, and onion.
- Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours.
- Add potatoes and carrots, cooking for 15 minutes.
- Add cabbage and cook for another 10-15 minutes until tender.
- Remove corned beef and let rest before slicing.
- Serve with vegetables and broth.
Notes
- Adjust cooking time based on the size of the brisket.
- Leftovers can be used for sandwiches.
- Store any leftovers in the refrigerator.
