Ingredients

- 3 cups diced potatoes
- 1 cup shredded cheese
- 1 cup cooked sausage, crumbled
- 4 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine potatoes, sausage, and half of the cheese.
- In another bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Pour the egg mixture over the potato mixture and stir to combine.
- Transfer to a greased baking dish.
- Top with remaining cheese.
- Bake for 45 minutes or until potatoes are tender.
- Let cool for a few minutes before serving.
Notes
- Substitute sausage with bacon or vegetables for a different flavor.
- Can be prepared the night before and baked in the morning.
- Store leftovers in the refrigerator for up to 3 days.
