- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup milk
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix diced potatoes, bell peppers, onions, and olive oil.
- Add garlic powder, salt, and black pepper to the potato mixture.
- Pour in the milk and mix until combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Top with shredded cheese.
- Bake for 45-50 minutes, or until potatoes are tender.
- Let cool for a few minutes before serving.
